Tasting Notes

In the just published Secrets of the Sommelier wine guru Rajat Parr recommends a few wines across the major varieties. Remarkably the only wine mentioned from California is our “Saratoga Cuvée” Cabernet Sauvignon.

His tasting notes state “This Cabernet Sauvignon – dominated blend features wonderful Old World complexity in the form of underbrush, earth, tobacco and dried herbs, but it is layered on a firm bed of New World fruit, featuring black cherry and plum. Its tannins are silky and ripe.”

It’s so nice to have someone else (especially Rajat) write my tasting notes for me. I concur. What the 2007 offers is an incredible Cabernet vintage with power and weight, balance and finesse. Produced along the same parameters as our Estate wine, we use natural yeasts, natural secondary fermentation, non-invasive winemaking, no fining or filtration. A pure expression of our beautiful wine region this wine is a blend of 78% Cabernet Sauvignon, 12% Merlot 2% Petit Verdot, 7% Cabernet Franc and 1% Malbec.

Barrel Regimen: 100% French 1/2 new; aged 24 months in barrel

Bottling: August 2008; no fining or filtration

Balancing bright berry notes with the earth tones of a cool cellar, this is a complex and forthright cabernet sauvignon. It includes merlot, france and small amounts of petit verdot and malbec—Mount Eden Vineyards estate fruit as well as grapes from three other vineyards in Saratoga and Los Gatos—all coming together in a wine that’s completely satisfying to drink.  There’s suppleness to the texture, a silk brocade of strawberry-tinged fruit, wood, stem and earth. Brisk and mouthwatering, this is glorious California cabernet and an unbeatable value.

The Domaine Eden 2007 Cabernet Sauvignon is an attractive, pretty wine layered with bright red fruit, flowers and spices. It is best suited to near-term enjoyment. Small amounts of Merlot, Petit Verdot, Cabernet Franc and Malbec round out the blend. The Cabernet Sauvignon was made from six different vineyards across the estate. Anticipated maturity 2011-2015.

Opaque violet.  Redcurrant, cherry and tobacco on the smoky nose.  Mineral-laced red fruit flavors are underscored by a gentle spicy quality and pick up a bitter cherry nuance in the mid-palate.  Finishes firm, with good clarity and lift and an echo of redcurrant.
